Infused with Christmas flavours, this alternative to turkey dish is sure to leave you wanting some more!
Ingredients
1 x Fry’s Vegetarian Golden Crumbed Schnitzels
½ cup x Apple juice
2 tbs x Honey
2 tbs x Olive oil
2 x Garlic cloves (crushed)
2 tsp x Thyme leaves
100g x Dried mixed berries (cranberry, blueberries, plums, cherries)
2 tsp x Honey mustard
½ cup x Orange juice
1 tbs x Brown sugar
½ cup x Cranberry sauce
Instructions
Cook the Fry’s Vegetarian Golden Crumbed Schnitzels in a large fry pan for 8-10 minutes, turning over once. Allow to cool. Once cooled, remove the crumb coating and place in a shallow dish. Prick the Schnitzel with a fork (this is to allow the marinade to soak).
In a bowl, combine the apple juice, honey, olive oil, garlic and thyme until mixed well. Pour over the de-crumbed Schnitzels and chill for at least 30 minutes, turning occasionally.
To make the cranberry relish, combine the dried mixed berries, honey mustard, orange juice and brown sugar in a medium saucepan. Stir and heat until boiling. Reduce the heat and continue cooking for 10 minutes, until the liquid is reduced slightly. Remove from the heat and stir in the cranberry sauce. Allow to cool before serving.
Remove the Schnitzels from the marinade and cook for 5-10 minutes on low heat in a frying pan, turning over once. Serve with the cranberry relish and a side of vegetables.
