Packed with vegetables, this stir-fry is delicious with the added sweet and sour taste.
Ingredients
1 x packet Fry’s Vegetarian Chunky Strips
1 x Red pepper, sliced
2 x Carrots, thinly sliced
2 x Courgettes, thinly sliced
2 x Celery stalks, sliced
1 cup x Bean sprouts
1 tin x Pineapple chunks
1 tbs x Ginger, crushed
2 tbs x Olive oil
½ cup x Orange juice
2 tbs x Lemon juice
3 tbs x Pineapple juice
¼ cup x Apple juice
1 tbs x Cornflour
1 tsp x Soy sauce
1 tsp x Tomato puree
1 tsp x Salt
1 tsp x Black pepper
2 tbs x Water
2 tbs x Sugar
Instructions
In a large work, add oil and sauté red pepper, carrots, celery and courgettes over high heat for 5 mins. Add bean sprouts, Fry’s Vegetarian Chunky Strips and stir fry for 10 mins.
To make the sauce: boil apple, lemon, orange and pineapple juice for 5 mins. Add sugar, soy sauce, tomato puree and salt/pepper, stir until combined. Add cornflour mixed with water to thicken the sauce.
Lastly add the sauce and pineapple chunks to the vegetable mix, stir fry and serve immediately.
